Enormously sweet, velvety and soft on the palate.
Pedro Ximénez grapes are laid out in the sun after picking until they are practically raisins. After that the fermentation starts slowly and its halted to maintain all the natural sugars.
The resulting wine ages in for 12 years in contact with the air in Jerez de la Frontera. Ebony in colour with iodine highlights. The aromas are reminiscent of figs, raisins and dates. Enormously sweet, velvety and soft on the palate, well balanced, with a very long finish.

"An excellent introduction to this extreme category. Intense caramelized-grapefruit character with plenty of toffee aroma. However, for a pedro ximénez, this has a certain lightness of touch and the sweetness is restrained. Long, raisiny but clean finish."

"Heady aromas of raisin, dried fig and currant lead on to a palate laced with Christmas spice, burnt caramel and walnut."

"Delivers the weight you expect from a PX, but with fresher cut. The singed walnut, brown bread, ginger, ganache and Turkish coffee notes are allied to a mouthwatering spearmint and treacle spine. Features good energy through the finish to match the mouthcoating feel."
