With a totally manual production process, this cava is produced with a liqueur d'expŽdition base and aged for 8 months in chestnut barrels, with a minimum total aging of 30 months.
A cava with a yellow colour with straw highlights and abundant fine bubbles that form a prominent crown. On the nose, it presents the powerful bouquets of its aging, with a prevalence of soft toasted notes that are in perfect harmony with the aromas of dried fruit, yeast, pastries, ripe fruit, honey and a balsamic touch.
There are three specific factors which make this Cava different:
- As with all previous Reserva Cavas it has been made from wines from
several harvests, combining the best qualities of each of them.
For this reason, it does not bear a declared vintage.
- The base wine, once bottled is closed with a natural cork and wire muzzle,
and not the traditional clamp or the modern day crown cork. This allows
very specific aromatic properties to develop.
- As a result of using the cork and muzzle closure for the ageing period, the
cava is hand disgorged.
Blend: Macabeo, Xarelálo and Parellada, plus a small percentage of reserve wines.
