VINEYARD
Our vines grow strong and robust in the heartland of South Australia’s vineyard regions. Bright, warm summers and deep sandy loam over limestone soils ensures they flourish to produce intensely flavoured, perfectly ripened grapes.
WINEMAKING
In the cool of the early morning specially selected parcels of Cabernet Sauvignon are picked at their juicy best and brought into our 110 year old winery. Here they are gently crushed and nurtured through fermentation and pressing to preserve the delicious flavours born in the vineyard. Our first duty is to fashion a Cabernet Sauvignon which speaks of the sundrenched vineyards of South Australia, soft juicy and ripe. This pristine Cabernet Sauvignon, the most noble variety, is then aged in barrels for 30 days, previously used by the drink of heroes; Australia’s most awarded Brandy. These aged barrels lend the wine a sophistication not found in less mature alternatives, bringing spice and length.
TASTING NOTES
COLOUR Intense, dense ruby red
AROMA Blackberry, Vanilla and Mocha
FLAVOUR Plum compote, forest floor, berries and chocolate with spicy aged tones and a soft ripe tantalising finish from the brandy tempered oak.
