GRANT BURGE The Holy Trinity GSM 2016
A traditional blend of Grenache, Shiraz and Mourvèdre with grapes grown in the Barossa, handpicked from old vines ranging from 35 to 90 years old. The heat and dryness toward the end of the harvest created excellent conditions for the late-ripening Grenache and Mourvèdre. A portion of the wine was fermented in traditional old concrete fermenters similar to the Southern Rhone technique, allowing heavy extraction of colour and tannin, particularly from the Grenache.
This is a rich and elegantly structured GSM that continues the long and lauded heritage for this traditional blend in the Barossa Valley. The nose has a bouquet of warm curry spices, earthiness, liqueur cherry and plum. This medium to full-bodied wine is filled with vibrant flavours of fresh red fruits and vanilla, complemented by fine and ripe tannins that run the length of the palate. The dense, mouth-filling mid palate and long, textural finish combine to create a wine that is rich and elegant, sweet and savory, and will sit beautifully on any table now, or cellar gracefully for 8-12 years.
PRIDE MOUNTAIN Merlot 2017
A seamless Merlot packed full of dense flavor including black cherry, plum, milk chocolate, wild strawberry, and toasted almond. This wine is all about balanced intensity, with fruit and texture galore to mirror its firm but velvety mountain tannins.
The 2017 growing season was generally mild until early September when a heatwave pushed the mercury up to near 105° F for several days. This gave our vines a jump-start and allowed us to harvest our eight merlot blocks between September 7th and October 7th. After an average of 20 days on the skins, the wine lots were gently pressed and racked to French oak barrels, 40% new, for a total of 14 months. Our 100% merlot base blend was assembled after the first 10 months in barrel, while the finishing touch of 4% cabernet sauvignon was added the following spring.

FEATURED WINES
CHAMPAGNE HENRIOT Brut Souverain Lumiere
Brut Souverain carries the quintessential expression of the great Champagne terroirs.
The exceptionally high proportion of chardonnay (50%), balanced to perfection with pinot noir (45%) and 5% pinot meunier make this a must enjoy bubbly. More than 25 cru wines from the finest Champagne terroirs in Cotes des Blancs and Montagne de Reims make up the blend, together with 30% of precious reserve wines.
The blend also contains a small quantity of the prestige Cuvee 38 Champagne. This wine, made in the style of a perpetual reserve crafted exclusively from Grand Cru chardonnay, is unique to the Champagne House and expresses its quintessential savoir-faire and originality.
On the nose, the Champagne offers magnificent, vivacious character. Citrus fruit aromas are followed by a cavalcade of floral bouquets, elderberry and vine blossom. Delicious brioche notes and the simplicity of lightly toasted bread and roasted almonds.
Well balanced and harmonious on the palate, summoning flavours of brioche, together with crunchy cherries and the sun-kissed blush of white peach. Clean on the finish, with all the freshness of just-picked walnuts.
GRANT BURGE Summers Chardonnay 2019
A premium cool-climate Chardonnay, lovingly crafted from top-quality Adelaide Hills fruit. The vintage saw an unusually dry summer and early autumn, with warm, dry days coupled with cooler night-time temperatures. This allowed the vines to produce fruit with exceptional character and flavor, while being harvested at lower degrees of sugar ripeness to produce vibrant, balanced, lower alcohol wine styles. Aged in premium French Oak barrels with a specially selected range of yeast strains. Maturation in oak on full yeast lees with regular battonage aids in the creation of a complex and creamy style of Chardonnay. Pale straw in color, the nose is filled with flavours of melon, juicy white peaches and nectarines, accented by sweet melon, apples, and zesty lime. Sweet floral top notes of peach blossom and jasmine, the earthy ground-spice characters of cinnamon and allspice in decadent double cream, and a touch of aged-brie cheesy funk and rich buttery Brioche that adds richness and complexity to the bouquet. The palate is creamy yet crisp with excellent natural acidity and structure. Hints of fresh citrus, white peach and lemongrass; complemented by the sweet zing of lemon and lime curd, toasted crumpets with orange blossom honey, the sweet spicy concoction of Chai Tea, and a hint of yeasty sourdough-like funk. The palate is long and luscious with a creamy mid palate leading through to a crisply refreshing finish.
